Pig intestine and pig’s head are considered the best cuts in Chinese cuisine. We use lean off-bone pig’s head braised in our Lu(卤) stock, cooked with slow-cooked pig intestine and crunchy Sichuan pickled
mustard. Famous Chinese dish that goes well with beer.
