Chongqing Chicken Pot is a signature dish of Jiāng-hú (江湖菜) Cuisine from Chongqing City. ‘Jiāng-hú’ refers to common folk culture. Jiāng-hú cuisine has a rugged and bold character. In terms of cooking, it does not stick to conventional methods; handfuls of chilli peppers are thrown in, scoops of Sichuan peppercorns are added, diced chicken is hidden in spicy pastes, and fish swimming in chilli oil soup. As for presentation, it also breaks with formality, serving meat on large plates and soup in big bowls. The diners themselves are rough and hearty, gulping down drinks and taking big bites of meat. The Chongqing Chicken Pot encapsulates this ethos perfectly; it is intensely spicy, numbing, flavorful, and deeply satisfying. To add complexity and balance, we incorporate Chinese herbal medicine into the dish. These herbs not only neutralise some of the heat but also lend an extra layer of depth.
