Laba Garlic, often referring to garlic pickled in vinegar, boasts a subtly sour and spicy flavour. Traditionally prepared on the eighth day of the twelfth month in the Chinese lunar calendar during the Laba Festival, it has earned its name. In Northern Chinese households, Laba Garlic is commonly used alongside shiitake mushrooms, wood ear mushrooms, and bamboo shoots to prepare a renowned Chinese New Year dish featuring pig’s intestines.
