Known as Hui Guo Rou or Double-Cooked Pork, this iconic dish has a rich history that dates back to the Song dynasty (960–1279). Its predecessor, “Yo Bao Pork,” was first documented in the Ming dynasty’s 《竹屿房杂部》, a lifestyle guide written by Song Xu. The traditional cooking process involves simmering pork belly until tender, slicing it thinly, and then stir-frying it with soy sauce, cooking wine, onions, and Sichuan peppercorns.

The introduction of chilli to Sichuan cuisine during the Ming dynasty added a spicy kick, but it was the invention of broad bean paste at the end of the Qing dynasty that truly elevated the dish. This aged bean paste, now a cornerstone of Sichuan cooking, brings a deep, complex flavour that perfectly complements the rich pork.

For over a century, chefs have prepared Twice-Cooked Pork the same way, honouring its long-standing tradition. Despite its simplicity as a stir-fry, the dish’s carefully refined balance of tender pork, aromatic spices, and bold flavours has stood the test of time.
