In the remote hills of Guizhou [pronounced gway-jow], salt is naturally scarce. But that didn’t stop the locals. To bring flavour to their food, the people of Guizhou developed ingenious fermentation techniques—creating rich, tangy bases that don’t rely on salt.
Their most iconic creation? Red sour stock — a punchy base made from cherry tomatoes, chillies, garlic, ginger, aromatic spices, and a splash of traditional Chinese baijiu. Aged slowly until deeply fragrant and mouth-wateringly sharp.
