In the Min Nan region of China, people often need to work in the mountains from morning until late afternoon. It is challenging for them to pack too many lunch boxes and travel through the mountains. They cook meat, veg and rice together so it can be carried in one container. This later became a well-known dish in the region. After years of development by chefs, Min Nan Pot Rice is now a classic dish that every household in the Min Nan region cooks. It uses dried shellfish and shiitake to boost umami, pork to add aroma, seasonal vegetables to make it fragrant, and finished with shallot oil to perfect it. This is a rice dish to be enjoyed on its own.
