A classic dish developed by the fishermen of the Min Nan Region. In the past, fishermen would only use soy sauce and water to cook fish and seafood on their boats. They discovered that this cooking method greatly enhanced the natural umami flavour of the sea, and named it Soy Water. Today, this dish can be found in every household in Min Nan and is loved by all. Our version uses a blend of four different types of soy sauce to achieve a balanced flavour, and we add shallot oil to enhance its fragrance. It's the perfect representation of the delicious sea umami that Min Nan cuisine is famous for.
