The Yú-Shiāng style is one of the most renowned stir-fry methods in China, boasting a history of nearly 100 years. It originated in Sichuan, and today, variations of it can be found in many Chinese cuisines. At its core, the flavour is sweet and sour, but the distinguishing ingredient is the pickled long chilies from Sichuan. These medium-hot chilies, pickled with star anise, sand ginger, and other spices, exude a unique aroma. Enhanced with Sichuan bean paste and pickled ginger, these ingredients add layers of depth to the dish. The primary component is tender and juicy minced pork, complemented by wood ear mushrooms and spring bamboo shoots, which lend a crunchy texture. This dish is a perfect showcase of harmonious flavours and balanced taste.
