This dish is a traditional noodle delicacy from North China. Its ingredients epitomise the exquisite utilisation of local resources, including lily flower, wood ear mushroom, spring bamboo shoots, and shiitake mushroom. The combination of these elements imparts a robust mountain umami flavour. We meticulously hand-mince Topside beef in-house and season it with soy and spices, adding to the authentic taste of North China.
